Hate cleaning fish, then you cannot even get to the point of tasting truly Goan cod. Salt cod is a task for lousy cooks, who have just started to cook for survival.
Garlic cloves, onions, and a pound of boneless salt cod did it. Certainly olive is not foreign to any marine delish. Going further, without losing the plot I followed his recipe. That paid the fruits quite well.
One thingy about Goan food, which is attractive enough: A cuisine without fish is utterly “couldn’t be” in Goan cuisine.
Personally, I keep following his gastronome’s quest to make sure that novel (for non-Goan cooks) spice mix and seasonings aren’t missed!!!
Hacks to dehydrate salt fish
Like David did it, we could soak the salt cod in cold water for 24 hours. As he directs, water needs to be changed a couple of times.
In case of jiffy #Bacalhau with Rechead, we need to blanch the fish for 10 hours. Pouring boiling water over a bowl of fish and covering them overnight dehydrates salt cod or any other salt fish.

This one might sound a bit complicated for amateur cooks. Filling a pot of salt cod with hot water and boiling it for 20 minutes. Then, adding lemon to it and boiling it for 20 more minutes.
- This makes it easier to remove the bones and skin. Also it removes excess salt.
Salt fish is not liked much by people from land-locked terrain. If it’s not for the ocean, then most of the maritime commoners would’ve been dying out of malnutrition and, of course taste buds with no life left in them.

“Tempero Cheiroso!”
Not a Hawaiian phrase for greeting, but a tempting #Spice mix ;)
